Cheddar Bruschetta

Bruschetta is traditionally bread rubbed with garlic cloves and roasted over hot coals. It is then salt and peppered, drizzled with olive oil and served warm. This version is perfect for your next barbecue. Easy to prepare and a delicious accompaniment for any grilled dinner. Recipe makes 1 large round bread, cut into squares it serves about 5-6. Recipe adapted from "Cheese To the Rescue!", by the American Dairy Farmers.
1 large Boboli bread or any ready-to-eat pizza crust
1 tablespoon butter, melted
2 cloves garlic, finely minced (or 1 teaspoon garlic salt - more or less to taste )
4-5 Roma tomatoes (or other meaty, less juicy, tomato)
8 fresh basil leaves (or 2 teaspoons dried)
pepper to taste
2 cups pizza cheese (blend mozzarella and cheddar - or cheese of choice), grated
1/2 cup Parmesan cheese, grated
Brush bread with melted butter. Sprinkle with minced garlic or garlic salt. Thinly slice tomatoes and arrange on bread. Finely slice basil leaves and sprinkle over bread. Pepper to taste. Sprinkle with grated cheeses. Heat bread in a covered grill for about 5-8 minutes or until cheese is melted. Cut and serve while hot.
