Latkes (or Potato Pancakes)

The first day of Hanukkah begins the 24th of December. Hanukkah is the Festival of Light. It celebrates a time in Jewish history when oil to light the lamp at the temple was sufficient for 1 day but miraculously lasted 8 days. In celebration of Hanukkah try this recipe for Latkes. Potato pancakes are delicious to serve anytime, and would make a wonderful breakfast dish. Recipe serves 6.

6 medium potatoes, peeled and grated
1 onion, finely chopped
1/2 teaspoon salt (opt. to taste)
1/4 teaspoon pepper (opt. to taste)
2 eggs, slightly beaten
1/4 cup flour
1/2 teaspoon baking powder
oil for frying

Peel and coarsely grate potato. Finely grate or chop onion. Combine potato and onion. Drain/squeeze out any liquid. Add salt, pepper, slightly beaten eggs, flour, and baking powder. Mix well.

Heat oil on skillet. Place large spoonfuls of potato mixture on hot skillet, flatten as desired. Fry until golden brown on the outside. Turn only once, brown opposite side. Serve hot with applesauce, sour cream, chutney, or gravy.
